"I have a coworker who gets so stressed she pulls her hair out as evidenced by random bald spots. I don't understand why this happens or how I can help."
This is called Trichotillomania which is a mental disorder that involves compulsive urge to pull out your own hair, eyelashes, eyebrows. It's based in anxiety, and to not pull out the hair creates overwhelming anxiety.
The best remedy for you as a friend to your coworker is to research this disorder and be compassionate and empathic to her. Also, normalizing it and being able to talk about it can help remove the shame.
